Insects are becoming an increasingly popular and talked about ingredient in today's food choices and discussions about potential solutions to human and environmental harm. With the devastating impacts of the global meat (especially beef) industries, some people are looking to the past to inspire cleaner, healthier and more sustainable food sources.
While this remains a foreign and creepy concept in much of the Western world, scorpions, tarantulas, maggots and other insects have been consumed in countries like Cambodia for centuries. In the following two videos I'll introduce you to Mr. Wai (a fearless scorpion and tarantula hunter who catches these venomous creatures with his bare hands) and to Bugs Cafe owner, Davy Blouzard, who has elevated bugs from street food to a hip and healthy fine dining experience.
